FOOD IN SEATTLE Two things are particularly noteworthy when it comes to food
in Seattle. The first is North-west cuisine's reliance on the best of what the
region produces - seafood so fresh it squirms, fat berries freshly plucked,
mushrooms dug out of the rich soil, cornucopias of fruits and vegetables.
Using
these ingredients in a way that flatters, not disguises, them is the essence of
Northwest cuisine.
The second notable thing about eating in Seattle is the blessed abundance of
vegan and vegetarian restaurants. Here, strict vegetarians will not find
themselves in that familiar situation of looking at a four-page menu and
settling, in despair, on the house salad.
Chefs in Seattle can be incredibly
inventive when dreaming up vegetarian options that satisfy even carnivores, the
kind of dishes that you might not even notice are veggie because the meat is
simply not missed.
Of course, Seattle also loves a good steak – but it's nice to
know that vegetarians have a vast number of options and won't be stuck nibbling
carrot sticks and baked tofu to survive their visit.
